500g beef cut into strips (preferably fillet of beef) 2 heaped tbsp Tex's Tropical Multi-Purpose Seasoning 1 tbsp soy sauce 2 large sweet red peppers, de-seeded and cut into chunks 2 medium sized onions, sliced 1 stalk eskellion or spring onion, chopped including green top 1 small piece of fresh root ginger, peeled and crushed 2 cloves garlic, peeled and finely chopped Oil for frying 1/2 cup water


Wash beef, drain then season with all the ingredients. Leave to marinate for at least 1 hour. Heat oil in a thick-bottomed frying pan. Add beef strips and stir fry until golden brown. Add the marinade and stir fry for a further 5 minutes then add water. Cover and leave to simmer until ready. If needed, add more Tex's Tropical Multi-Purpose Seasoning to taste.
