1 medium sized onion, finely chopped
2 tbsp butter, margarine or oil
1 small sweet red pepper, de-seeded and chopped
1 tin canned tomatoes, drained
500g peeled prawns or shrimps
2 tbsp Tex's Tropical Multi-Purpose Seasoning
Heat butter in a saucepan then add onion, pepper and fry until softened. Add tomatoes and rest of ingredients except prawns and simmer gently for 10 minutes or until thickened.
If needed, more Tex's Tropical Multi-Purpose Seasoning can be added to taste.
Lastly, add prawns and cook for another few minutes.
Serve on a bed of hot white rice with salad.
